There’s been a real buzz in Nailsea since last summer and that all seems to be down to the introduction of the Conscious Fish Shop which was founded by trained chef, Jonny Burnett.
His calibre is high; he’s cooked for King Charles during his princedom at Highgrove and worked alongside Raymond Blanc too, so you know the quality will be second to none. It all started fairly low key, Jonny was delivering fresh fish to one restaurant per week but word soon got around and now, within 6 months, he has a fleet of 4 vans and over 70 restaurants ordering fish every week. His supply of fresh Brixham fish is being served across Bristol, Clevedon, the Chew Valley and now Wells and Bruton too, and with his experience as a chef guiding his customers, he is proudly supplying sustainable fish whilst offering preparation and recipe suggestions too.
Jonny says, ‘We are proud to be Bristol’s No. 1 fresh sustainable fish supplier, and equally proud to be serving the county of Somerset too. So much of the fish bought in the supermarkets is not locally or sustainably sourced and thankfully people are switching on to that. Even if you work full time and don’t have time to prepare the fish yourself, our fishmongers will prepare it for you; or if you don’t fancy cooking, we have homemade meals ready to go. From haddock kievs to stuffed and rolled monkfish to posh finger fingers, we make it fresh and of the highest quality.’
Ever-evolving, Jonny has from this year decided to launch fish-filleting master classes in Nailsea too. For the latest course dates keep tabs on their facebook page (conscious food co) and website (consciousfoodco.co.uk) though you’ll need to be quick as the spaces get snapped up really quickly.
Just a couple of minutes’ walk away is one of Jonny’s customers, the restaurant White Truffle. With chefs Andy and George at the helm, you can be sure to see fresh fish on the menu such as Devon hake or seabass, alongside other West Country favourites such as slow-cooked shoulder of lamb. The promise from the restaurant is that they change the menus regularly so that the food is dynamic and always enticing the regular clientele to come back for more. ‘White Truffle is run on passion, adrenaline and creativity.
